Chicken breasts & mango & almonds



    

Chicken breasts contain important nutrients such as vitamin B6, niacin, phosphorus, and selenium, all of which play a role in maintaining optimal health.

 Ingredients:

2 chicken breasts

1 lemon

1 mango, peeled and diced

1 red onion, thinly sliced

2 tablespoons olive oil

1/4 cup flaked almonds

1 tablespoon honey

1/2 teaspoon cinnamon

1/2 teaspoon turmeric

1/2 teaspoon salt

1/2 cup chicken broth

 

 

Instructions:


Rub the chicken breasts with the juice of half a lemon. Rinse with clean water and dry with paper towels. Season chicken with salt and turmeric on both sides.

Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add chicken breasts and cook for about 5 minutes on each side or until browned and cooked through. Transfer chicken to a plate and set aside.

In the same pan, add diced mango, chicken broth, honey and cinnamon. Cook over medium heat for about 5 minutes or until mango is tender and sauce has thickened. Remove from heat and set aside.

In a separate saucepan, soak the almonds in 1/4 cup of water with cinnamon and honey. Bring to a boil, then reduce heat and let simmer for 10 minutes or until the almonds are tender and the sauce has thickened. Remove from heat and set aside.

Cut the red onion in thin slices and soak them in lemon water for 10 minutes to reduce their pungent flavor.

To serve, place the chicken breasts on a plate and top with the soaked red onion slices. Spoon the mango sauce over the chicken and onions. Finally, drizzle the almond sauce over the top. Serve immediately.

 

By soaking the almonds in a separate saucepan, they will have a chance to cook through and soften properly. Additionally, soaking the red onions in lemon water will help to reduce their sharpness and make them more palatable.
